Genoese Sponge

(from EGGS by Michel Roux, page 268)

20g Softened Butter, to grease tin
125g Plain Flour, plus extra to dust
4 Medium Eggs, at room temperature
125g Caster Sugar
30g Butter, melted & cooled to tepid

  1. Preheat the oven to 190degC/Gas 5.
  2. Butter & lightly flour a 20cm cake tin.
  3. Put the eggs & sugar in a bowl, immediately whisk them together for about 12 mins, until the mixture leaves a ribbon trail when you lift the whisk. You can also do this in an electric mixer.
  4. Shower in the flour, delicately fold into the mixture with a rubber spatula.
  5. Add melted butter, fold in carefully without over working the mixture.
  6. Pour the mixture into the cake tin, bake for 30 mins, or till it is cooked.
  7. To test, lightly press the centre of the sponge with your fingertips; there should be a slight resistance, the sponge should “sing”, emitting a a soft “zzz”.
  8. Invert on to a wire rack, giving the sponge a quarter turn after 10 mins to prevent it sticking.
  9. Leave to cool for 3-4 hours.

Note: Before the cake could cool down, while it is still warm, it has found its place in our tummies.

Baking at last!!!

Thanks to Michel Roux’s Eggs that now I can learn to bake confidently. I have always dislike handling greasy buttered utensil, let alone trying to figure out how to be an “oven whisperer”. My oven or toaster oven is a leftover from MIL. I sent it twice for temperature and timer calibration and servicing but still could not get accurate temperature setup. I gave up and bought an oven thermometer to check.

I love Genoese Sponge Cake from Michel’s Eggs  book. In fact was obsessed with it for the past continuous 3 days, baking before and after dinner. I am happy with my progress. Tomorrow I shall bake again if my fever is gone. Like it so much that I have the recipe in my heart all the time. The basic ingredients makes the recipe a safe choice to start learning baking again as I don’t like the idea of wasting food.

I had early lunch today to view National Laureate poet Datuk A.Samad Said sketches at Petronas Art Gallery. Awesome ink sketches on napkins. A simple man of few words when he is in the bookstore, this is the place I frequently bump into Datuk A. Samad Said. I stay silent and move quietly if he is around, not that he is frightening but overwhelmed by his humbleness despite his fame and influence as a National Laureate. Mee Kolo
Mee Kolo Kuching is just as healthy as Pansor Manuk. The locally produced springy and chewy noodle is fine and served generously in quantity. Watch out for soya sauce condiment that accompanies Mee Kolo. I tried a few version of Mee Kolo, some soya sauce is very hot.

Rice Noodle in Tomato Gravy
Noodle or rice noodle in tomato gravy is simple and easy to digest in hot weather. Surprisingly this dish is not found in Kuala Lumpur and Petaling Jaya. In Kuching, noodle or rice noodle in tomato gravy is a normal dish in any local café. This is an appetizing dish that suits all ages.

I love chicken dishes in Kuching. Besides Pansoh Manuk, my favourites are also fluffy Nasi Beriyani with fried chicken at Bukhari, Jalan Satok. Chinese chicken rice at a chicken rice shop in front of Grand Continental Hotel.

Kuching’s Pansoh Manuk

I had Pansoh Manuk (bamboo chicken with fragrant rice) for lunch at hotel. I didn’t bring my camera, what a waste. Back to Pansoh Manuk. Healthy as it is high in protein and little fat as chicken cooked in adequate amount of water boiled together with  local fresh herbs. Side dishes such as Acar Sayur whets appetite and Milin stir fried with Belachan. Bario rice is served with Pansoh Manuk, is less starchy than Thai fragrant rice but twice the price. I managed to find few links on Pansoh Manuk.

A local friend told me there are 2 types of popular edible fern (is it a type of fern?) here. Cheaper and bigger one is Pucuk Paku and the other twice expensive and finer is Milin (Mandarin: Mei Ling). Pucuk Paku is fibrous and obvious “greenish” after taste. Milin on the other hand is crispy, sweet and tender.

Satok weekend market
It was such an amazing experience at Satok weekend market. Sarawakians are very clean and neat Malaysians. Satok market is such a clean place to do marketing. It is a good example for open wet markets in Petaling Jaya and Kuala Lumpur. I has a wonderful time savoring the visual feast of local produce. Take time to enjoy Satok pictures.

Lost But Not Completely

I lost my voice but have not lost any internet connection to update this blog. I am so frustrated that I can’t talk at all. Not long ago I dreamt I lost my voice, struggled to force words out of my throat. Today it is a reality… I’m sad but glad my mind and fingers are still here to blog ;-).
